CCE Reggie Sapp Memorial Meat Smoking and BBQ Workshop to be held in Canton June 23

CANTON – Cornell Cooperative Extension of St Lawrence County, 2043B State Highway 68, is hosting the first annual Reggie Sapp Memorial Meat Smoking and BBQ Workshop on Sunday, June 23 from 9 a.m.-2 p.m.

The late Reggie Sapp served on the St Lawrence County Cornell Cooperative Extension Board of Directors for 6 years, said a press release from the Extension. He was a proud supporter of agriculture, a restaurant owner, and was passionate about cooking, specifically BBQ and smoked meats. Reggie’s house was always open, and his kitchen was in operation. His pride and joy were his cookhouse with its many grills and cooktops, the Extension said.

Mike Morgan from the mobile food business Morgan’s Munchies will instruct the workshop. 

Mike will have his meat smoking set up on hand and participants will get to observe the process of preparing meat for smoking as well as witness components of the smoking process. 

They will get to learn about different smoking techniques and supplies as well as watch a meat trimming demo. 

This workshop will also have a hands-on component where participants will break down a whole chicken from Tucker’s Black Angus Ranch, season it, and store it in a vacuum sealed bag to take home.

A lunch of smoked meat and sides will be provided and those registered will have a chance to win apple wood chips donated from Canton Apples and a smoker grill donated from Walmart in Massena. 

Extension is offering this workshop to celebrate the life of Reggie Sapp, support local food entrepreneurs, and connect the community with local meat producers.
