Village of Canton seeking someone to take over operation of Partridge Run Golf Course eatery

CANTON – The Village of Canton is seeking a chef, restaurateur or caterer to run the club house eatery at the Partridge Run Golf Course at 70 Sullivan Dr.

Partridge Run is set to open sometime in April, and the village, which operates the course, does not have anyone to take over the eatery for the coming season.

The business was operated last season by Jen and Tim Bacon, of Bacon Brothers BBQ of Hermon, but they have decided to pursue other ventures, said Village Trustee Carol Pynchon.

The restaurant at the course was run for years by Dennis Walsh, and then the Smokehouse, before the Bacons took over last year.

Pynchon said the village has reached out to a couple different businesses to see if they would take over the operation but no one has expressed any interest.

Pynchon said the principal thing the village needs is someone to handle the morning coffee business for the golfers and provide food throughout the day. “But they could do as much as they want,” Pynchon said. She said the space offers opportunities for a busy dining business or catering operation.

“It was a nice alternative to eat in Canton,” said Pynchon of the eatery which features a large deck overlooking the course. “It’s one of the nicest spots in town with a beautiful view of the golf course.”

Whoever takes over operation of the eatery would run it as an independent contractor, renting the space from the village. All profits from food and liquor sales would go to the contractor. The village and the restaurateur would both be responsible for various aspects of building upkeep, depending on the contract that is eventually approved.

The contractor would have to provide their own liquor license to sell alcohol at the site.

Pynchon pointed out that the start of the Partridge Run golf season in April is not that far off. “We need to get it going,” she said of the restaurant.

Interested parties can submit a letter of interest to the village offices at the Canton Municipal Building, 60 Main St., or contact either Pynchon at cpynchon@cantonny.gov, or Trustee Beth Bullock Larrabee at elarrabee@cantonny.gov, or the village clerk’s office to set up a time to discuss the opportunity.

Pynchon said the village would eventually need a written proposal from interested individuals or businesses.
