POTSDAM -- The Potsdam Food Co-op, 24 Elm St., will highlight its September Cheese of the Month, Cambozola, also known as Blue Brie, on Thursday, Sept. 14, from 3:30-5:30 p.m.
Cambozola is an interesting cheese made in the Bavarian region of Germany. It is a hybrid of a French soft-ripened triple cream Brie/Camembert and an Italian Gorgonzola.
The Brie/Camembert is injected with the same mold used in Gorgonzola, Roquefort, and Stilton cheeses but is neither pungent nor crumbly.
Cambozola has a savory nutty flavor and can be served with fruits, or baked whole.
It can also be used as a custard base for an interesting quiche or as a filling in savory crepes.
