SUNY Canton's new executive chef Steve Maiocco assumed his duties as assistant director of dining and executive chef recently. He says the guiding principle of his culinary approach is to serve fresh, local food. Susan Law, director of dining services, said Maiocco's duties will entail overseeing food production across the entire campus, including catering. He will also be responsible for training and overseeing food service team members. Maiocco previously served as SUNY Potsdam's executive chef prior to accepting his current position.
