POTSDAM: Cheese of the Month sampling at Potsdam Food Co-op, 24 Elm St., 315-265-4630, potsdamcoop.com; featured is Country Castle Limburger, made in Wisconsin; characteristic aroma of limburger is the result of being surfaced ripened with brine and smeared with beneficial bacteria, aroma tends to be much more pungent than the flavor. Its rind is orange and sticky, and the interior is pale yellow, young limburger is mild with a slightly rubbery texture, while mature versions are softer and more pungent, pair limburger with a dark beer or strong black coffee.
