CANTON -- Food writer and avid cook Paul Graham will offer a series of three gluten-free cooking classes in March at the Harvest Kitchen at the Extension Learning Farm, 2043 State Highway 68.
Each course in “A World of Gluten Free Flavor” will focus on how to use a naturally gluten-free grain: chickpeas, buckwheat, and corn.
These classes are an opportunity to learn the intricacies of each grain, and are open to all: those with wheat or gluten allergies and home cooks who want to expand their culinary horizons.
Each class is held on a Monday in March from 6-8 p.m., and includes making and sampling the evening’s dishes along with recipes to take home. Participants can sign up for one or more of the following classes:
Cooking with Chickpeas, March 2.
Cooking with Buckwheat, March 16.
Cooking with Corn, March 30.
All classes will feature multiple ingredients sourced from North Country producers, and the class series is just one of many in the Extension’s Celebrating Local Food: A Culinary Series, which runs through 2021, and aims to teach seasonal eating skills and techniques for home cooks to build confidence in the kitchen.
