Gideon's Galley food truck open in Potsdam

POTSDAM — Anyone looking for something different for lunch today can try Gideon’s Galley, 75 Market St.

The food truck will offer paninis, steak sandwiches, wraps, soups, fries and homemade chips all made with local products.

Owner Allen Ellis is looking to bring his 20 years of culinary experience to downtown. He also works at PACES at SUNY Potsdam as chef, having graduated from Paul Smith’s College and Parishville-Hopkinton Central.

His truck will offer fare made with breads from the local co-op and meats from Glazier’s. He also gets some product from Price Chopper as needed. He does not use frozen product.

“Keep it local and keep the money here,” Ellis said.

Ellis will be open from 11 a.m. until 2 p.m. today with plans to open on weekends in the same location this September as weather permits. Next year he hopes to open a few days a week in Potsdam and venture out to Massena and Canton too.

Ellis, 40, will work alone for now, but expects to hire as more days and hours are added to his business.

“This has been a dream of mine since college, even before food trucks were popular,” he said.

Some people may have already tried some of his cuisine during Parishville’s town-wide garage sales. He was set up at a church feeding hungry people looking for deals at garage sales.

Ellis is booked at several events in the coming weeks, and is taking catering bookings for events in the area if someone is interested.
