Maple syrup production in Canton

The family owned business produced 900 gallons of syrup last year, but owner Elliott Rodee said it is not likely to make as much this year with the earlier warm weather. He started production Feb. 14 this year, the earliest date ever. Ideal weather are sunny days with 40 °F and freezing temperatures at night. When leaves start to bud with the warmer temperatures the season is over, he said. NCNow photo
