POTSDAM – The Hop, a diner-style eatery at 3 Market St., is set to reopen within a few days.

Owners Becky and Danny McDermott are putting the finishing touches on the interior and are awaiting state Health Department approval.

This will be the second Hop at that location. The previous version closed several years ago and in the meantime Eddie and Banna Soikum, the owners of the That Cuisine restaurant on Maple Street, had planned on opening a noodle shop there – in fact a “Noodle Shop” sign stood above the entry for a time – but that plan fell through.

Becky and Danny McDermott both have experience in the food business.

Becky has worked at Maxfields on Market Street and at Mama Lucia on Depot Street for about two years.

Danny McDermott’s family in the New York City area has been in the restaurant business for years, and he participated. Here, he has been working as a registered nurse with the Office of Mental Health.

In the new Hop, the McDermotts plan on being open from 6 a.m. to 3:30 p.m. seven days a week and extending the evening hours when the students return in August.

“We’ll try to meet community needs,” Becky said, explaining that they will probably add hours during special events such as the Potsdam Summer Festival.

They will serve standard diner fare such as breakfast all day, fried foods, hamburgers, hot dogs, and omelettes.

They plan to hire three to five people, part-time to start, “but full time if they work out well. We want to make a little family here,” said Becky.

They will have “to-go” orders, and once they settle into the routine, they plan on making local deliveries.
