DePeyster woman starts organic potato company, Milkweed Tussock Tubers

DEPEYSTER – A DePeyster woman has launched a small-scale, certified organic, regenerative-based potato company, named Milkweed Tussock Tubers.

Catherine Bennett, a St Lawrence University graduate and assistant director of Bittersweet Farm, can now add potato grower to her resume.

Six months ago, Bennett began her own MTT specializing in rare and heirloom potato varieties with a focus on colored spuds.

“Their mission is to enhance the ecosystems and communities around them while preserving endangered tuber varieties,” she said via email. To this end, Bennett includes native plants and biodynamic practices in her gardens, is improving her rainwater catchment systems, and eagerly educates interested parties about the benefits of, and how to begin their own, regenerative agriculture enterprises.

The end of the growing season will see 16 varieties of potatoes for sale, many for both seed and eating. Milkweed Tussock Tubers offers internships, apprentices and welcomes volunteers and visitors.
