CANTON -- What do you get when you combine high-quality seasonal ingredients, knowledgeable instructors and a modern teaching kitchen?

Cornell Cooperative Extension's Harvest Kitchen Preservation Series.

The first workshop in this series, Strawberry Bonanza, focuses on strawberries, donated by Martin’s Farmstand in Potsdam.

This is an opportunity to improve your kitchen skills in an interactive setting, said an Extension press release. The class will learn to can berry preserves, dehydrate fruit leather and bake delicious mini pies.

The session will be held at the Extension Learning Farm, 2043 State Highway 68, on Wednesday, June 20, from 6:30-8:30 p.m. for Strawberry Bonanza.

Class size is limited and pre-registration is required.

The workshop fee is $20. Participants will get to sample all the recipes as well as take home some finished product and recipes.

To reserve a spot online visit http://stlawrence.cce.cornell.edu/ or contact Cooperative Extension at 315-379-9192, ext. 229, or harvestkitchen@cornell.edu.

The Harvest Kitchen Preservation Series focuses on seasonal recipes, produced in a flavorful and safe way, said the press release.

Each workshop will feature products from a different local farm with the remaining ingredients being donated by Nature's Storehouse in Canton.

Depending on the class topic, each course will include several preservation methods such as water bath or pressure canning, freezing, drying, fermenting and baking- along with tips for how to use these preserved goods.

The courses are taught by Extension educators and/or Master Food Preserver volunteers and are held in the Harvest Kitchen at the Extension Learning Farm.
