POTSDAM -- Amy Conger, executive chef for Potsdam Auxiliary College Educational Services (PACES), recently won a second place silver medal at the Northeast Regional National Association of College and University Food Services Culinary Chef Challenge.
The mocha rub consisted of dark cocoa, ground espresso powder, thyme, chili, crushed red pepper and kosher salt, the release said.
Individual competitors had 60 minutes, with ten additional minutes for plating, to prepare four portions of an original hot entrée, featuring the mandatory protein of bone-in pork loin, side dishes and sauces to create a balanced plate.
No advance preparation or cooking was allowed.
Participating schools included, University of Massachusetts, Smith College, Rhode Island School of Design, University of Rochester, SUNY Binghamton, SUNY Buffalo, and Harvard University.
