POTSDAM -- Juanita's 1st Thursday Creations will feature “Super Asparagus Patties” at the Potsdam Food Co-op, 24 Elm St., May 7, from 3:30 to 5:30 p.m.
The patties are a powerhouse of protein, vitamins, especially vitamin A, and minerals. The star ingredient is asparagus. The recipe features carrots and raw almonds and is a delicate balance of smooth and crunchy.
Because the patties are baked instead of fried, they are lighter, non-greasy, and have far fewer calories.
After sampling Juanita's creation, shoppers can join “Shopping with Rosie” between 4:30 and 5 p.m. for a personalized tour of the co-op to see how the bulk bins work, or find out how to order through the Buying Club for deeper discounts.
