POTSDAM -- The Potsdam Food Co-op, 24 Elm St., will host its Say Cheese Please! sampling Thursday, Feb. 9, from 3:30-5:30 p.m.
Highlighted will be their February Cheese of the Month, Hornbacher, a relatively new specialty Alpine cheese produced by the award-winning master cheesemaker Michael Spycher, in the Emmental region of Switzerland.
It is named after a small river, the Hornbach, near his Fritzenhaus dairy. This semi-hard cheese, aged about one year, is made from the nutrient-rich milk of local cows that graze in the area's lush meadows.
It has a creamy texture and a floral, nutty flavor that has been described as "reminiscent of a buttered baked potato." Hornbacher pairs well with a rich white wine such as Pinot Gris, a nutty dessert wine such as sherry, champagne, or a malty beer.
