POTSDAM -- The Potsdam Food Co-op, 24 Elm St., will host Juanita’s First Thursday Creations from 3:30 to 5:30 p.m. on July 7 featuring Ethiopian teff veggie loaf.
Teff is a tiny, ancient grain that is a species of lovegrass native to Ethiopia and Eritrea, and where it is used for a multitude of purposes. Teff has a mildly nutty flavor and can be used in cereals, stews, and also ground into flour for the injera bread used in Ethiopian and Eritrea cuisine. Teff is high in protein, iron, manganese, magnesium, calcium, Vitamin B-6, Vitamin C, copper, and fiber, while being very low fat, cholesterol-free, and gluten-free.
