It from New York state.
It is a washed curd cheese made by the Cooperstown Cheese Company in Milford.
It is comprised of equal parts of raw sheep and cow's milk and has a creamy texture.
The sheep and Jersey cows that provide the milk live on small family farms near Milford that do not use growth hormones and keep their animals outside as much as possible.
It is brushed with olive oil and aged for at least 4 months.
Justine has a rich, nutty, and somewhat earthy flavor that is mellowed a bit by the cow's milk.
