Potsdam Co-op to sample aged French cheese on Thursday

POTSDAM -- The Potsdam Food Co-op's Second Thursday Sampling will be held April 9 from 3:30 to 5:30 p.m. at 24 Elm St. The “Say Cheese Please!” feature will be April's Cheese of the Month; Bucherondin goat cheese.

This is a pasteurized goat cheese made by Sevre & Belle, a dairy cooperative formed in 1893 in the Loire Valley of France. Aged 5-10 weeks, Bucherondin is produced in short logs. It has a white interior and a wrinkled bloomy white rind resembling bark.

Bucherondin has a mild flavor when young that sharpens as it matures. Its soft center becomes drier as it ages but its outer layer remains creamy and gooey. Bucherondin is often crumbled in a mixed green salad, as a topping for a beet salad, or for snacking with breads, crackers, and grapes or fresh figs.
