POTSDAM -- The Potsdam Food Co-op, 24 Elm St., will highlight its January cheese of the month, Parmigiano Reggiano, on Thursday, Jan. 15, from 3:30 to 5:30 p.m.
Although similar parmesans are made in other countries, including the U.S., Parmigiano Reggiano is produced only in the Italian provinces of Parma, Reggio Emilia, Bologna, Modena and Mantova.
It is a hard, granular cheese, made from skimmed or partially skimmed grass-fed cow's milk and is generally aged for at least 2 years.
