Inspired by the traditional Middle Eastern bulgur salad staple, this dish brims over with flavor, color, and nutritious ingredients.
Asparagus, that welcoming veggie sprouting up so straight and green in the garden, is laden with vitamins K, A, and C, riboflavin, folate, copper, iron, and many trace minerals.
Bulgur, a whole grain, is high in manganese, magnesium, iron, and vitamin B-6, and insoluble fiber.
Bulgur is the whole wheat kernel that is cooked and dried before being consumed, distinguishing it from cracked wheat, which has not been parboiled.
It can be served as a side salad in smaller portions, or served as a main meal.
