POTSDAM -- Potsdam Food Co-op’s Juanita’s First Thursday Creations will feature Jacob’s cattle bean stew.
The event will be Feb. 5 from 3:30 to 5:30 p.m.
Jacob's cattle beans are brightly patterned bean seeds of milky white and deep maroon. The heirloom bean dates back to the 1700s. While its origins are unknown, it is believed either to have arrived with German settlers (called Torellen beans), or to have been cultivated by the Passamaquoddy Indians in Maine, according to the co-op. The bean is a source of protein, fiber, magnesium, potassium, and iron, and a good source of calcium and vitamin C.
