The creation this month will be kasha soup.
Well known to Russian and Eastern European peoples in centuries old cooking, kasha is toasted buckwheat, and despite its name, comes from a seed (not a grain) and is therefore totally gluten-free. Buckwheat is known to be heart healthy, lowers blood sugar, and is also high in manganese, fiber, and helps to build strong bones.
