POTSDAM -- Ratatouille with Tempeh will be the featured recipe for Juanita's 1st Thursday Creation on July 2 at the Potsdam Food Co-op, 24 Elm St. from 3:30 to 5:30 p.m.
While tofu is more well known in this country, tempeh is a superstar in its own right, very high in protein and manganese, but also rich in riboflavin, niacin, phosphorus, copper, iron, and calcium. Tempeh is a soybean derived food originating in Indonesia, where it is used as a nutritious staple.
After sampling Juanita's creation attendees can join “Shopping with Rosie” between 4:30 and 5 p.m. for a personalized tour to see how the bulk bins work or find out how to order through the Buying Club for deeper discounts.
