CANTON -- Cornell Cooperative Extension of St. Lawrence County is hosting a Harvest Kitchen Preservation Series class titled “Fun with Fermentation” on Tuesday, Aug. 28, from 6:30-8:30 p.m.
The class will be held at the Extension Learning Farm, 2043 State Highway 68 in Canton.
The workshop focuses on the ancient and simple process of fermenting vegetables. Rather than canning with vinegar, this culinary method relies on salt to safely preserve vegetables as in sauerkraut, kimchi and dill pickles.
This alternative creates a unique “living,” food.
All produce for this workshop is donated by the community farm littleGrasse Foodworks in Canton.
Class size is limited and pre-registration is required. The workshop fee is $20. Participants will get to sample fermented goodies as well as take home some product and recipes.

The Harvest Kitchen Preservation Series focuses on seasonal recipes, produced in a flavorful and safe way. Each workshop will feature product from a different local farm with the remaining ingredients donated by Nature's Storehouse in Canton.
Each course includes several preserved recipes along with tips for how to use these preserved goods.
The courses are taught by Extension educators and/or Master Food Preserver volunteers and are held in the Harvest Kitchen at the Extension Learning Farm.
