POTSDAM -- SPECTRUM at Clarkson will sponsor a one-night dining event with music on Wednesday, Jan. 21 at 1844 House, 6886 U.S. Highway 11. The cost is $30 per person plus tax and gratuity. A cash bar will open at 5:30 p.m. and seating for dinner is from 6 to 8 p.m.
The menu includes amuse bouche: sharp NY cheddar gougère, tomato fresh herb bisque: winter truffle and gruyere cheese toast, sorbet: earl grey tea. Entrée options include chicken wellington, whole grain mustard crusted breast of chicken topped with a forest mushroom duxelle wrapped in flaky puff pastry crust. Complemented with Cognac-peppercorn sauce. The vegetarian option is an autumn root vegetable and winter squash au gratin.
