POTSDAM -- The Potsdam Food Co-op's 2nd Thursday Sampling will be held Sept. 8 from 3:30 until 5:30 p.m. at 24 Elm St. The Say Cheese Please! feature will be their September cheese of the month moonlight chaource. Moonlight is a slightly aged, soft ripened cow's milk cheese whose bloomy white rind conceals an ash layer.
It has a tart, firm chèvre-style center when young, but as it ripens from the outside in, it becomes more delicate and creamy. For more information please call 265-4630.
