Polenta originated in Northern Italy in the late 16th century as a peasant food, but is now enjoyed all over the world under various names. Generally made from yellow cornmeal it can be baked, made into porridge, and also made into cakes for frying.
Polenta is loaded with Vitamins A and C, iron, protein, potassium, contains some calcium, and is also gluten-free and cholesterol-free. Due to the cornmeal, cheddar cheese, and pinto beans, this recipe is rich in protein and has a wonderful southwestern flavor, according to event organizers.
