POTSDAM -- The Potsdam Food Co-op's "Say Cheese Please! Sampling" on Thursday, May 14, from 3:30 to 5:30 p.m. will highlight its May cheese of the month, castello Danish fontina.
It is touted as Denmark's finest fontina and a delightful interpretation of the original Italian fontina, Co-op officials said.
Danish fontina is significantly different, but a popular alternative to its Italian counterpart and a bit more budget-friendly. It is a cow's milk cheese that has a pale yellow interior and an inedible red wax rind. Because it is aged for a shorter time than the Italian version, it has a milder slightly sweet flavor and a rich creamy texture.
