Potsdam Co-op to feature bread pudding with artichokes and two cheeses on Thursday

POTSDAM -- This month's recipe for Juanita’s Creation at the Potsdam Food Co-op, 24 Elm St., is bread pudding with artichokes and two cheeses. This month tasting will be held Jan. 8 from 3:30 to 5:30 p.m. Info: 265-4630.

The featured ingredient, parmigiano-reggiano cheese, is named after the areas in Italy in which it is produced. This distinctive cheese is strictly regulated in its origins and production methods. Parmigiano-reggiano, made from raw, pastured-raised cow's milk, is unpasteurized and aged anywhere between 12 months and 36 months, depending upon the variety.
