OGDENSBURG -- Parker's Roadside Deli & BBQ held a soft opening July 15 offering barbecued food, homemade salads and several kinds of ice cream and toppings.

The eatery is located at 4962 State Highway 68 where the former diner Ruby's Roadside once operated.

The owner, Parker Piercy, says he operated a seasonal catering business for many years roasting pigs as a hobby and in 2002 received a catering permit.

"I've fed thousands of people though weddings and other events and I thought this was a great, easy way for people to get my food," he said.

The building was completely renovated featuring a take-out style deli and ice cream window. A tent and picnic tables are set up outside.

Ice cream has been available since July 4 and Piercy says they averaging $100 an hour in ice cream sales.

"Nothing on the ice cream menu costs more than $5…and we have sundaes, banana splits and soft and hard ice cream options," he said.

About a dozen part-time employees work at the deli preparing salads, deli meats and serving customers. Piercy handles all the cooking of the meats and monetary operations involved in the business.

The menu as of July 15 offered hot sandwiches including brisket, roast beef and turkey; as well as pasta, macaroni, potato and coleslaw salads and hotdogs.

"My specialty is pulled pork and I make my own sauce," Piercy said.

Hours of operation are 11 a.m. to 9 p.m. daily. They will close Nov. 1 of each year and reopen in the spring when the weather breaks in March or April, Piercy said.
