Full-service bakery, cafe opens in Potsdam

POTSDAM – A full-service bakery and café with a famous cinnamon roll recipe has opened in a remodeled house on outer Market Street next door to the Price Chopper Plaza.

Baker Karen Rayburn opened the Sugar Shack Bakery & Café for the first time Aug. 5.

Customers from as far away as Pulaski have come seeking the cinnamon rolls made famous by her mother as the long-time baker at (now closed) McCarthy’s Restaurant in Canton.

Sugar Shack offers a variety of goods that are baked fresh daily including cinnamon rolls, cookies, brownies, doughnuts, muffins, éclairs, crème puffs, cupcakes, pies, breads and rolls.

Fresh deli sandwiches can be ordered for take-out at the bakery counter with a full breakfast and lunch menu offered in the café.

Rayburn also bakes special occasion cakes and fills custom orders.

Most of her life has been dedicated to food service, but after beating cancer several years ago Karen knew she had to get back to what she truly loves - baking.

Along the way she took advantage of many local resources available to small business owners and entrepreneurs.

Business planning and financial projections were completed with help from the Small Business Development Center at SUNY Canton, and financial assistance was provided through loans from the Potsdam Community Development Corporation and St. Lawrence County Microenterprise Revolving Loan Fund.

Hours of operation are Monday through Saturday 6 a.m. to 3 p.m., and Sunday 8 a.m. to 2 p.m. Brunch is served 10:30 a.m. to 2 p.m.
